Congrats to Cindy Y. who has been making great progress in occupational therapy! In recent sessions, she has been able to verbalize, “I don’t want it” or “I’m all done,” instead of running away or pushing back. She has also been able to return to activities with verbal cueing only, instead of relying on physical support to carry her back. Her parents expressed, “We are all glad she's making progress at PCDA!”

Dear Zoo is twenty-five years old -- and still as popular as ever!

And with an updated look, this children's classic is sure to delight a new generation of readers!

Nutrient of the Month:
Vitamin D

Vitamin D is a fat-soluble vitamin that plays an important role in brain function, immune system regulation and bone health. Research is also showing that it is very important to our overall health, affecting risk of heart disease, stroke and cancer. Spending at least 15 minutes outside in sunlight each day is the best way to help our bodies produce the vitamin D it needs. When UV light reaches our skin, the cells are signaled to produce vitamin D. Make sure you take advantage of the great sun in southern California and continue to make efforts to get outside throughout these cold winter months.

Food sources of vitamin D are limited, but include wild, fatty fish (like tuna and salmon), dairy products (like yogurt and milk) and other fortified foods (like breakfast cereals). Try this simple finger food as a fun way to introduce salmon to your children.

  • 12 baby potatoes, sliced in half
  • 1 tsp canola oil
  • 1/4 tsp salt
  • 1/3 cup sour cream
  • 1 tbsp capers, drained and finely chopped
  • 1 75-g hot-smoked trout or salmon, about 1 fillet, flaked
  • 2 tbsp finely chopped chives
  • flaky sea salt (optional)


  • Preheat oven to 400F. Line a baking sheet with foil.
  • Use a melon baller to scoop out flesh from each potato half, leaving at least 1/8 in. of flesh around sides and bottom, and set aside for another use. Place hollowed-out potatoes on prepared sheet, cut-side up. Brush with oil then sprinkle with salt. Season with fresh pepper.
  • Bake in centre of oven until fork-tender, 25 to 30 min. Remove from oven.
  • Stir sour cream with capers. Fill potatoes with sour cream mixture, then top with smoked trout. Sprinkle with chives and sea salt.

Congratulations Volunteer
of the Month Andy Luong
PCDA Newsletter

Andy started volunteering in 2014 at PCDA’s Harvest Moon Event. Andy, along with a group of family and friends, came out to support PCDA’s mission by helping with the silent auction and general event support. Since then, Andy has been determined to return to gain more direct hands-on experience as he has interest in learning more about Speech & Language Pathology. Over the summer, Andy participated as a volunteer in several PCDA programs including Young Athletes and Creative Arts Camp. After the summer, Andy studied abroad in Taiwan and recently returned to the states. Upon his return, one of his first stops was PCDA. Andy spent a day helping with the Annual Toy Drive, sorting toys that were donated by community supporters and breaking down empty boxes to be used again next year. He also helped to support the Music Therapy Department prepare for its annual Holiday Recital. PCDA appreciates Andy’s continued support. We look forward to matching Andy up with more volunteer opportunities for him to further explore his career interests in working with children.
